
Salad
2 cans chickpeas, drained and rinsed
1/2 cucumber, diced
Red pepper, diced
1/2 red onion, diced
Chopped parsley
Feta cheese crumbles
Dressing:
Zest and juice of one lemon
1 garlic clove, mashed into a paste
1/2 teaspoon crushed red pepper flakes
Olive oil
Salt and pepper
Combine salad ingredients in a large bowl. Combine dressing ingredients in a small jar or sealed container, shake until well mixed. Pour dressing over salad and toss well. Allow salad to sit in the refrigerator for one hour before eating.
